Rebuilding my front struts with new shocks, probably a bit pointless as the ones I took out look new anyway!
When I unscrewed and removed the shocks there was oil in the tubes and while I have seen this before on other cars I'm not sure why it's there? I don't think it's from leaking shocks and believe it's there for a reason, maybe to keep the shock cool?
Does anyone know what grade oil it is and how much there should be?

Just a squeeze of any engine oil will do. Helps prevent corrosion, but better, it helps transfer heat from fhe shocks to the tube.
