Converting to 5x120, who's done it and how?

So I've been looking for wheels I like for a month or two now and it seems the only wheels I like are horrifically expensive, or 5x120, which annoys me!
Also, the big brake options for our cars seem to be crap, and a conversion to 5x120 would open up a wealth of disc options.
So has anybody done it, and what method works best? I'm not interested in hub adapters as those tend to screw up the wheel offsets too much, so being as I'm starting with 316 struts, are there hubs that can be made to fit relatively easily? I have a lathe and I'm not afraid to use it.........
