What options are there for replacing steering wheel?
Ideally I want one that sits closer to me as I've got long legs it's a bit far away and my knees hit it .

I don't have a problem with the sport wheel and you've seen what shape I am! Hahah
At the moment I've got a dished race style wheel that I don't think would fit your taste but is spot on for me.
I'd say a classic style momo wheel as you can get 40mm spacers to bring it exactly where you want it.

My car has a momo steering wheel (I forget the style) and boss, with an OMP boss extender between the boss and wheel to bring the wheel further back, I have long fingers, so reaching the indicator and wiper stalks is no big deal, but being as the stalks are steel tubes, they could be carefully bent back to match.

Are extensions like that road legal? Did you ever use some force to see what happens?

It's billet aluminium and i have no worries about how strong it is, and it bolts to the boss in the same way that the steering wheel did. The bolts are all 10.9 high tensile. The Momo boss retains the ability to collapse in an accident, so I can't see any reason at all why it wouldn't be road legal.

Good then, just better be safe... to me felt different than just one long steering boss

Will e30 m tech wheel fit?

Potentially.
It dawned on me after you left e28 has a tech 1 wheel that will fit!
Don't think it will bring it much if any closer to you tho
