Is there anyway I can give my 1.8 M10 a little more power without major rebuilding .

I am wondering if twin 40s could be used or similar ? or is there an M10 that will bolt in from another model E30 ? that will give me a bit more grunt .

Not looking for big power and want to stay M10.

Sticking a weber carb on is the best way to make it run nicer

Call James @ JFi Classics in Brecon and say I suggested you call. I'm pretty sure he has an e21 Weber conversion on the shelf.
