I'm finding the exhaust is hitting on some speed bumps and things over here, and the rear seems to be lower than the front, even though both have -60mm

Would I benefit from having -40 on the rear?

If I were you I would opt for street spec coilovers so that you have adjustment available to whatever ride height you want.
