Momo Prototipo - size & dish?

I'm thinking about a Momo Prototipo with black spokes but I'm not sure if I need the flat or dished variety.

Also, they seem to be 350 mm or 380 mm. I think 380 is standard size in an E21 so going a little smaller would be nice so long as it doesn't mask the dials.

Help please from anyone who's got one fitted.

I would go for the smaller with max dish - if you are tall?
